POTATO DOUGH KNISHES 
3/4 c. minced onion
4 c. mashed potatoes
1/2 c. potato flour
6 tbsp. chicken fat
3 eggs
1 tsp. salt
1/4 tsp. pepper

Brown onion in 4 tablespoons fat; cool. Knead together remaining fat, potatoes, potato flour, eggs, salt, and pepper. Break off pieces about 2-inches long and flatten slightly.

Place teaspoon of browned onion on each and cover by pinching edges together. Place on greased baking sheet. Bake at 375 degrees for 25 minutes. Makes about 20.
