TAFFY APPLE SALAD | |
1/2 c. sugar 1 tbsp. cornstarch 2 tbsp. lemon juice 1 egg, beaten 20 oz. can pineapple chunks, drain and reserve liquid 8 oz. carton Cool Whip 3 med. red delicious apples, unpeeled, about 2 c. 2 c. miniature marshmallows 1 1/2 c. peanuts, unsalted, chopped Mix sugar, cornstarch, lemon juice, egg and pineapple juice in saucepan. Cook over low heat, stirring constantly until thickened about 4 or 5 minutes. Cool. Then stir in Cool Whip. In large bowl, mix apple, pineapple chunks, marshmallows and peanuts. Toss both mixtures together and refrigerate 2 or 3 hours. |
