GRANDMA'S VEGETABLE SOUP 
3-4 beef shanks OR
5-6 short ribs
1 lg. can tomatoes
1 lg. can tomato sauce
2 qts. water or less
3 cubed potatoes
4 sliced carrots
3-4 celery stalks, sliced
1 lg. onion, thinly sliced
Any other vegetable may be added
1/2 c. barley
1 c. Minute Rice OR
2 c. spaghetti or macaroni

Brown meat on all sides in 1/4 cup of oil; add water and onion, salt and pepper to taste; bring to boil. Simmer about 4 hours. Take meat off bones and back into the kettle with all vegetables and tomatoes and sauce. Bring to boil and then simmer for 2 hours. Add barley and one other dry ingredient; boil and simmer 3/4 hour. Additional beef cubes of meat can be added in the beginning for meaty vegetable soup.
