FRUIT CAKE 
2 c. sugar
2 eggs
1/2 c. shortening
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. nutmeg
1 c. raisin juice
3 c. flour
1 c. nuts
1 c. raisins
1 1/4 c. water

Cook raisins in water and set aside, reserving juice. Beat sugar, eggs, and shortening together. Add soda, baking powder, salt, cinnamon, cloves, and nutmeg. Add cooked raisins, raisin juice, flour, and nuts. Bake at 350 degrees in loaf pan. Ice with Easy Penuchi Icing.

EASY PENUCHI ICING:

1/2 c. butter
1 c. brown sugar, packed
1/4 c. milk
1 3/4 to 2 c. powdered sugar

Melt butter in saucepan. Add brown sugar. Boil over low heat 2 minutes, stirring constantly. Stir in milk. Bring to a boil stirring constantly. Cool to lukewarm. Gradually add powdered sugar. Beat until thick enough to spread. If icing becomes too stiff add a little hot water.
