SPINACH CASSEROLE 
2 pkg. fresh or frozen spinach
1 c. Mozzarella cheese
1 c. mushrooms
1 c. sour cream
2 eggs
1 c. cracker crumbs

Cook spinach, then drain well. Beat eggs and mix with remaining ingredients. Add egg mixture to spinach in casserole dish. Top with cracker crumbs. Cook at about 350 degrees for about 20 minutes.
