SPINACH CASSEROLE 
3 lbs. fresh spinach
3 c. light white sauce (recipe follows)
1/2 tsp. dry mustard
1/2 c. sauteed chopped onions
8 oz. Jack cheese
1 to 2 tsp. jalapeno juice
1/2 tsp. pepper
1 1/2 c. seasoned stuffing mix
butter

Cook spinach 1 to 2 minutes. Drain well. Chop. Prepare white sauce: Melt 6 tablespoons butter over medium heat. Add 4 tablespoons flour and stir. Cook until bubbly, about 3 minutes. Add 3 cups milk. Reduce heat and simmer until thick and smooth, about 5 minutes. Season to taste with salt, pepper, dry mustard.

Saute chopped onions and add to white sauce with grated cheese, jalapeno juice, black pepper and spinach. Pour into buttered casserole dish and top with stuffing mix. Drizzle with melted butter. Bake 20 to 30 minutes at 350 degrees until hot and bubbly and top browns.
