ESCALLOPED ASPARAGUS 
1 (No. 2) can asparagus
1 c. milk or mix juice from asparagus with milk to make 1 c. liquid
2 tbsp. butter
2 tbsp. flour
1/4 lb. Velveeta cheese
3 hard cooked eggs, sliced
Buttered bread crumbs
1 tsp. dry mustard
Salt and pepper to taste

Melt butter and add flour and asparagus juice and milk; cook until thickened. Add cut up cheese to sauce and cook until cheese melts. Add dry mustard to sauce. In greased casserole, put layers of asparagus, sliced eggs (pieces of ham may also be added). Pour cheese sauce over all. Top with buttered bread crumbs and sprinkle with paprika and black pepper. Bake 25 minutes in 350 degree oven.
