PORK AND SAUSAGE JAMBALAYA 
2 lbs. cubed pork
1 lb. sliced smoked sausage
1/4 c. oil or bacon drippings
2 c. onion
2 c. celery
1 c. bell pepper
1/4 c. garlic, diced
7 c. chicken stock
2 c. mushrooms (optional)
1 c. sliced green onion
1/2 c. parsley
Salt and pepper to taste
2 tbsp. Kitchen Bouquet
4 c. uncooked rice

Heat oil over medium high heat. Saute pork until brown, about 20 minutes. Add sausage, fry 10 more minutes. Take out all oil except 1 tablespoon. Add all vegetables until they are caramelized. Then add stock, bring to rolling boil. Then reduce heat to simmer. Cook for 10 minutes. Season to taste using salt, cayenne pepper and black pepper. I suggest that you slightly over season since rice requires extra seasoning.

Add uncooked rice, reduce heat to very low and allow to cook for 1 1/2 hours, stirring at 15 minutes intervals.
