APPLE-NUT MUFFINS 
3 c. sifted flour
2 c. sugar
1 1/2 tsp. baking soda
1 tsp. salt
3 eggs, beaten
1 tsp. vanilla
1 c. corn oil
2 c. chopped apples
1 c. chopped pecans

Sift together flour, sugar, soda and salt.

Blend the eggs, vanilla, oil, apples and pecans into the dry mixture, just until moistened. Do not over mix. Spoon into muffin cups two-thirds full. Bake at 325 degrees approximately 30-40 minutes, until knife inserted into muffin comes out clean. Yield: 2 dozen.
