PORCUPINE MEATBALLS 
1 can tomato soup
1 lb. ground beef (lean)
1/4 c. raw rice
1 egg
1/4 c. finely chopped onion
2 tbsp. parsley (optional)
1 tsp. salt
Garlic powder (optional)

Mix 1/4 cup of the soup with the beef, rice, egg, onion, parsley and salt. Shape into small balls. Brown in a little shortening on top of stove or in oven (400 degrees).

Mix the rest of the can of tomato soup with approximately 1 cup of water. (To make plenty of sauce, this may need to be doubled. Tomato sauce or Ragu may be mixed in with the soup mixture also.)

Place meatballs in sauce mixture. Bake covered or cook on top of stove until rice in meatballs are cooked.
