CANTONESE FRIED RICE 
1 c. rice, cooked according to pkg. directions
1/4 c. oil
1 egg, slightly beaten
1 tsp. salt
1/4 tsp. pepper
1/4 c. green onion, finely chopped
1 1/2 tbsp. soy sauce

In a skillet, heat oil until very hot. Add egg and cook for 2 or 3 minutes, breaking into small pieces with a fork. Add cooked rice and remaining ingredients and cook over moderate flame for 7 or 8 minutes. Serves 4.
