SWEET PICKLED CABBAGE 
16 c. chopped cabbage
3 c. chopped onion
1/2 c. pickling salt
4 c. sugar
3 c. vinegar
1 1/2 c. water
1 tbsp. mixed pickling spice
May add shredded carrots and green and red pepper for color

Combine cabbage, onion and salt. Let set overnight. Drain and rinse once. Combine sugar, vinegar and water. Tie spices in cheese cloth bag. Add along with cabbage mixture.

Bring to boil, boil gently uncovered for 5 minutes. Remove spice bag, fill jars. Adjust lids. Process in boiling water bath for 5 minutes. Makes 6 pints.
