NO-BAKE FRUITCAKE | |
This is a family recipe passed down to me from my grandmother. It is probably close to 50 years old. I could no longer find a 1 lb. box of graham crackers (they think we won't notice). The largest I found was a 14 1/2 oz. box. Use a little less milk and fewer marshmallows. 1 lb. box graham crackers 1 lb. candied fruit 1 lb. chopped dates 1 lb. chopped walnuts 1 lb. marshmallows 3/4 cup milk 1 plastic wrap or wax-paper box Crush graham crackers in a food processor and pour into a large bowl. Add candied fruit, dates and walnuts. Add milk and marshmallows to a large saucepan over low heat. Stir until marshmallows are melted and smooth. Pour over graham cracker/fruit mixture. Stir well. Line box with wax-paper. Press fruitcake mixture into box. Remove from box, remove wax-paper and wrap with plastic wrap and refrigerate. Repeat with remaining fruitcake mixture. Makes about 3 logs. Slice into 1/4-inch slices to serve. Note: These are more of a candy than a true fruitcake and a little sticky, but good. Submitted by: Jeff Mathewson |
