HOT SPICED PORK
4 lg. pork sparerib chops or 2 whole pork fillets (about 2 lbs.)

FOR THE MARINADE:

2 tbsp. vegetable oil
1 garlic clove, crushed
1 tsp. salt
1 to 2 tbsp. chili sauce (according to taste)
2 tbsp. soy sauce
1 tbsp. Worcestershire sauce
1 tbsp. soft brown sugar
1 tbsp. tomato paste
1 tbsp. vinegar
1 tsp. ground ginger
Freshly ground black pepper

To prepare the Marinade: Put all the ingredients in a bowl with pepper to taste and stir well.

Put the pork in the marinade and leave at least 2 hours, preferably overnight, stirring the mixture occasionally to ensure the pork is well coated. Lay chops on the barbecue or grill rack (broiler). Cook, turning the pork and basting with marinade. Serve immediately with baked potatoes or rice, coleslaw, and a dish of natural yogurt. Is a delicious marinade! (We make lots and then freeze some down.)
