CHOCOLATE ALMOND PIE 
1 c. vanilla or chocolate cookie crumbs
3 tbsp. sugar
1/3 c. melted butter
OR buy a ready made chocolate cookie pie crust

FILLING:

2 (4 oz.) bars milk chocolate
1/3 c. strong coffee
1 tsp. vanilla extract
2 c. whipping cream (reduce to 1 1/2 c. if using ready made crust)
1/4 c. toasted slivered almonds

CRUST: Mix cookie crumbs, sugar, and melted butter. Press into bottom and sides of a 9 inch pie tin. Let cool to set.

FILLING: Place chocolate bars and coffee in a heavy saucepan. Cook on low heat until chocolate is melted. Add vanilla and mix. Cool. Whip cream until it forms stiff peaks. Gently fold in whipped cream to cooled coffee/chocolate mixture. Pile into pie shell and refrigerate overnight or until well set.

Garnish with toasted almonds. Add chocolate shavings if desired.
