OYSTER FRITTERS 
1 c. oysters (chopped & drained)
4 eggs, separated
1/8 tsp. pepper
1/2 tsp. salt
6 tbsp. flour
1 tbsp. minced onion

Beat eggs until thick and creamy; add onions, salt, and pepper; then the flour a little at a time. Fold in oysters and stiffly beaten egg whites. Drop by spoonfuls in hot fat. Serves 5 people.
