SQUASH FRITTERS 
2 c. grated summer or yellow squash
1/4 c. finely chopped onions
Pepper to taste
2 tsp. sugar
1/2 tsp. salt
6 tbsp. flour
2 eggs, beaten
2 tbsp. melted butter

Combine all of the ingredients well. Drop by tablespoonful onto hot greased grill or frying pan and cook until golden brown. Turn over and brown. Serves 6.
