EASY CHEESECAKE SUPREME 
3/4 c. graham cracker crumbs
1/8 c. melted butter
1 (8 oz.) lite cream cheese, softened
1/2 c. granulated sugar
1 tbsp. plus 1 tsp. lemon juice
1/4 tsp. vanilla extract or 1/4 tsp. lemon extract
Dash of salt
2 eggs
1 c. lite sour cream
2 tbsp. granulated sugar
1/4 tsp. vanilla or lemon extract

Combine graham crackers and butter in 9 inch pie plate for crust. Do not bake. Combine and blend well cream cheese, sugar, lemon juice, extract and salt. Add 1 egg at a time; mix well after each.

Pour all ingredients into crumb crust. Bake at 325 preheated oven for 25-30 minutes until center is set.

Combine and stir sour cream, sugar and extract. Spread over baked cheesecake. Return to oven. Bake 10 minutes. Cool. Chill. Top with graham cracker crumbs or favorite fruit, if desired. Serves 6.
