SAUERKRAUT SALAD 
1 (28 oz.) jar sauerkraut
1 c. diced celery
1 c. diced bell pepper
1/4 c. diced onion
1 sm. jar diced pimentos (drained)

DRESSING:

3/4 c. sugar
1/4 tsp. salt
1/8 tsp. pepper
1 tsp. celery seed
3 tbsp. vinegar (I like white wine vinegar)

Drain sauerkraut. Rinse well, squeeze dry and chop. Place into large bowl. Add pimentos.

Heat in a small saucepan. Mix dressing until sugar is dissolved. Pour over kraut. Stir well and let stand overnight in refrigerator.
