HOLLANDAISE SAUCE 
1/2 lb. melted butter
3 eggs
2 tbsp. cornstarch
Juice of 2 lemons
Salt and pepper to taste

Beat eggs, butter, lemon juice and cornstarch well. Cook over low heat or in a double boiler until thick. If too thick, add 2 tablespoons hot water.
