HOLLANDAISE SAUCE 
1/3 c. butter
1 tbsp. flour
1/2 c. boiling water
3 egg yolks
2 tbsp. lemon juice
1/4 tsp. paprika
1/2 tsp. salt

Melt the butter; add the flour. Stir in the boiling water to make a sauce; then beat this into the egg yolks, stirred creamy with the lemon juice and seasonings.
