12 apples 1 c. water 4 c. sugar 2 tsp. ground ginger 5 whole cloves 1 stick cinnamon 1 tbsp. nutmeg 1/2 tsp. ground mace 6 allspice berries 12 eggs, separated 4 bottles sherry or madeira 2 c. brandy Core and bake apples. Combine water, sugar, ginger, cloves, cinnamon, nutmeg, mace and allspice berries in a saucepan and boil for 5 minutes. Beat egg whites until stiff but not dry. Beat yolks separately until light in color. Fold whites into yolks, using large bowl. Strain sugar and spice mixture into eggs combining quickly. Bring sherry and brandy, in separate pans, almost to boiling point. Add hot wine to egg and spice mixture, beginning slowly and stirring briskly with each addition. Toward the end of this process, add the brandy. Now, just before serving and while the mixture is still foaming, add the baked apples. Serve hot in crockpot. |
