SEAFOOD STUFFED GREEN PEPPERS | |
6 med. green peppers 1/2 lb. shrimp, cooked, peeled, and deveined 8 oz. pkg. frozen crabmeat or fresh 1 c. cooked rice 1/2 c. chopped celery Dash of black pepper 1/2 c. chopped onion 2 tbsp. chopped pimento 3/4 c. mayonnaise 1 tsp. Old Bay seasoning 1/2 tsp. salt Bread crumbs butter Cut off top of each pepper. Remove seeds and membrane. Cook in boiling, salted water 5 minutes. Drain well and set aside. Combine shrimp, crabmeat, rice, celery, onion, and pimento. Combine mayonnaise, Old Bay, salt, and pepper. Stir into crabmeat mixture. Mix well. Stuff peppers with seafood mixture. Sprinkle each with bread crumbs and dot with butter. Place in a 1 1/2 quart baking dish. Add hot water 1/2 inch deep. Bake at 350 degrees for 30 minutes. Serves 6. |
