CHICKEN A LA KING 
1 c. sliced mushrooms (can be canned, drained)
2 tbsp. chopped green pepper
1/4 c. butter
3 tbsp. flour
2 c. milk
1 beaten egg yolk
2 1/2 c. diced cooked chicken
2 tbsp. chopped pimentos

Lightly brown mushrooms and green pepper in butter. Add flour and blend. Add milk and seasonings. Stir some of hot mixture into egg yolk and add to remaining hot mixture. Cook until thickened, stirring constantly. Add chicken and pimento. Serve on biscuits, hot buttered toast or in Swedish Timbales. Diced ham or drained canned tuna fish or turkey may be used instead of chicken. I sometimes double the sauce.
