PINEAPPLE COTTAGE CHEESE SALAD 
2 pkg. Knox
1 sm. can crushed pineapple (save juice)
1/2 pt. whipping cream, whipped
1/2 c. sugar
Juice of 1 lemon
1 c. cottage cheese

Heat lemon juice and sugar. Dissolve Knox in reserved juice and water to make 3/4 cup. Add juice and sugar to Knox. When cool add whipped cream, cottage cheese and pineapple. Pour into mold. Chill 6-8 hours.
