HUMMINGBIRD CAKE 
3 c. flour
2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 eggs, beaten
1 c. oil
1 1/2 tsp. vanilla
1 (8 oz.) can crushed pineapple (do not drain)
1 c. pecans
2 c. bananas, chopped
Cream cheese frosting
1/2 c. chopped pecans

Combine first 5 ingredients in large bowl. Add eggs and oil. Stir until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 cup pecans, bananas.

Spoon batter into 3 greased and floured 9 inch round pans. Bake 350 degrees 25-30 minutes. Cool in pans 10 minutes. Remove. Cool completely. Spoon frosting between layers, top and sides. Sprinkle 1/2 cup chopped pecans on top.

CREAM CHEESE FROSTING:

1 (8 oz.) cream cheese, softened
1/2 c. butter, softened
1 (16 oz.) pkg. powdered sugar
1 tsp. vanilla

Cream until smooth. Add sugar and vanilla. Beat until light and fluffy.
