HUMMINGBIRD CAKE 
3 c. flour
2 c. sugar
1 tsp. salt
1 tsp. baking soda
2 tsp. cinnamon
1 1/2 tsp. vanilla
3 eggs
1 c. cooking oil
1/2 c. butter
1 c. broken pecans
1 (8 oz.) can crushed pineapple & juice
2 bananas, cut up

Preheat oven to 325 degrees. In 1 bowl, mix flour, sugar, salt, soda, cinnamon and vanilla with a spoon. In another bowl, mix eggs, oil, butter, pecans, pineapple, juice and bananas. Mix both bowls of ingredients with a spoon. Do not beat. Bake in a tube pan or 3 greased 9 inch pans for 1 hour.

CREAM CHEESE FROSTING:

2 (8 oz.) pkg. cream cheese, softened
16 oz. powdered sugar
1 c. butter, softened
2 tsp. vanilla

Mix the cream cheese and butter until smooth. Add the powdered sugar. Beat until fluffy and stir in the vanilla.
