PUMPKIN PUDDING - FIJI | |
1 1/2 tbsp. ghee (butter) 2 or 3 pieces cinnamon (tsp.) 2 cloves (tsp.) 5-6 cardamoms (ginger - tsp.) 500 gm or 1 lb. pumpkin 1/2 c. water 4 c. milk 3/4 c. sugar Heat ghee (butter) and fry in cinnamon, cloves and cardamoms (ginger) until golden brown. Add pumpkin cut into cubes and cook in 1/2 cup water until it softens. Add milk and bring to a boil. Add sugar and cook for 5-10 minutes. Serves 5. |
