BLACK EYED CREOLE 
1 pkg. (16 oz.) dried black eyed peas
1/2 lb. salt pork or bacon
3 c. chopped onions
1/3 c. dried parsley or 1 c. fresh
2 cloves chopped garlic
1 - 1 1/2 tsp. salt
1 tsp. red pepper
2 lbs. smoked sausage
1 tsp. pepper
3 dashes Texas Pete
1 tsp. Worcestershire sauce
1 (8 oz.) can tomato sauce
2 c. crushed tomatoes
1/4 tsp. dried oregano
1/4 tsp. dried thyme

1. Cover peas with water and soak overnight.

2. Drain and wash peas; cover with water. Add pork and cook covered for 45 minutes.

3. Add next 13 ingredients and cook covered for 1 hour.

4. Add sausage and cook uncovered for 45 minutes. Serve over cooked rice.
