LUMPIA 
1 pkg. lg. sq. spring rolls (wrappers - comes in packages of 20)
1 lb. ground beef or pork or turkey
2 carrots, diced
3 or 4 stalks celery, diced
3 or 4 green peppers, diced
1 onion, diced
1 tbsp. black pepper (or to taste)
1 tbsp. salt (or to taste)
1 egg

Note: To make vegetables small enough, I usually use a food processor.

In a large bowl, mix all ingredients together, except wrappers. (I usually use my hand for this. It's messy but it mixes the ingredients well.) Separate wrappers. Lay out wrapper on flat surface. Take small amount of meat mixture from bowl (about a small fist full). Spread across width of wrapper. Roll meat in wrapper, sealing with water or beaten egg. Continue until all wrappers are used. Fry in hot oil, turning and watching carefully, until golden brown. Makes 20 or 40 if you cut them in half.
