CRUNCHY PEANUT BUTTER SANDWICH 
1/2 c. drained, crushed canned pineapple
2 tbsp. finely chopped celery
2 tbsp. finely chopped carrots
1/2 c. creamy peanut butter
4 slices whole wheat bread

In small bowl combine pineapple, celery and carrots, set aside. Spread 2 bread slices with peanut butter. Top with pineapple mixture. Cover with remaining bread. Makes 2 servings.
