ITALIAN GREENS WITH GORGONZOLA
DRESSING
 
4 oz. crumbled Gorgonzola cheese
1/2 c. olive oil
1 tbsp. balsamic vinegar
1 tbsp. lemon juice
1/2 tsp. sugar
1/2 tsp. salt
Dash of pepper
Dash of paprika
1 clove garlic, minced

1/2 c. sliced fresh mushrooms 1 head romaine, torn into pieces 2 c. sliced raw zucchini 1/2 c. sliced radishes

To prepare dressing, combine the gorgonzola cheese, olive oil, lemon juice, sugar, salt, pepper, paprika and garlic.

In a large bowl, combine onion and mushrooms. Pour the dressing over top and marinate overnight.

Just before serving, combine romaine, zucchini and radishes in a large salad bowl. Pour dressing and marinated vegetable mixture over and toss. Serves 4-6.
