RUBY CHEESE MELT 
1 lb. sharp cheddar cheese, grated
2 tbsp. milk
1/4 c. mayonnaise (or enough to blend mixture)
1/4 tsp. black pepper
Dash of cayenne
2 tbsp. grated onion
1 1/2 c. pecans, finely chopped
Strawberry preserves

Cream cheese, milk and mayonnaise in mixer. Add seasoning and onion. Stir in nuts. Place in well oiled pie plate. Mold. Chill. Unmold and place on tray, spread strawberry preserves over top. Serve with crackers.
