CAULIFLOWER IN CHEESE PUFF 
1 lg. cauliflower
3/4 c. grated Cheddar cheese
4 eggs, separated
1 tsp. sugar
1-1/2 c. medium white sauce (2 tbsp. each butter and flour, 1 c. milk)
Salt and pepper

Trim cauliflower and break into flowerets. Cook in boiling salted water until barely tender. Put in buttered shallow baking dish; reserve a few flowerets for garnish. Make white sauce; add cheese. Beat egg yolks, sugar, salt and pepper to taste, and add to white sauce.

Beat egg whites until stiff and fold into sauce. Pour over cauliflowerets. Bake in preheated oven at 350 degrees for 20 minutes. Garnish with remaining flowerets.
