FOUR-BEAN SALAD OR FIVE | |
1 (No. 2) can kidney beans, drained 1 (No. 2) can green beans 1 (No. 2) can yellow wax beans 1 (No. 2) can garbanzo beans (Can add 1 can white butter beans) 1/2 c. chopped green peppers 1/2 c. chopped pimento 1 sm. grated onion 1/4 c. pickle relish 1/2 c. chopped celery 3/4 c. sugar 1/2 c. wine vinegar (or cider vinegar) 1/2 c. olive oil (salad oil) 1 tsp. salt 1/2 tsp. pepper 1/2 tsp. celery seed 2 cloves finely chopped garlic Mix together all beans, pimento, green peppers, onion, pickle relish and chopped celery. Mix sugar, vinegar, oil, salt, pepper, celery seed and garlic. Bring to a boil for 1 minute to assure its being well mixed. Pour over the bean mixture. Refrigerate 4 to 5 hours. Better if refrigerated overnight. |
