SMOKED SAUSAGE POTATO CHOWDER 
1 (4 5/8 or 5 1/2 oz.) pkg. scalloped potato mix
3 c. water
1 (10 oz.) pkg. frozen mixed vegetables
4 c. milk
2 tbsp. flour
1 (12 oz.) pkg. fully cooked smoked sausage

In a 4 1/2 quart heavy pan, combine potatoes from mix and 3 cups water. Bring to a boil. Reduce heat and simmer, covered, for 5 minutes. Add vegetables; return to boil. Cover and simmer for 10 minutes, stirring occasionally. Blend 1/2 cup milk, flour, and seasoning packet. Set aside. Add remaining milk and sausage to pan. Stir in flour mixture; cook and stir until bubbly. Cook 2 minutes more. Serves 8.
