LEMON BUTTER 
3 eggs, beaten slightly
1/2 lb. or 1 c. sugar
Juice of 1 1/2 lemons, use the real thing, it's better
2 tbsp. butter

Cook in top of double boiler until thick. Makes about 1 cup. Can easily be doubled or quadrupled. Delicious on toast. Also makes a good tart filling.
