HOMEMADE EGG NOODLES 
3 eggs
1 1/2 tsp. oil
1/2 tsp. salt or garlic salt
Enough bread flour to make stiff dough

Beat eggs, add oil then salt and flour a little at a time until you have a stiff dough. Knead a few minutes. Rub oil over dough and let rest for 45 minutes. Cut dough in 2 equal parts, roll both parts as thin as possible. Cut in long strips as thin or thick as desired. Hang for 24 hours to dry, then break into pieces, store or cook as directed.

If you don't have a pasta hanger or dryer, you can hang the noodles from clean clothes hangers then hang up to dry.
