SPINACH SQUARES 
4 tbsp. butter
3 eggs
1 c. flour
1 c. milk
1 tsp. salt
1 tsp. baking powder
1 lb. mild Cheddar, grated
2 pkg. frozen chopped spinach, thawed & drained
1 tbsp. chopped onion
Seasoned salt, optional

Preheat oven to 350 degrees. Put butter in baking dish 9 x 13 x 2 inches and melt in oven. Remove. In large bowl beat eggs well, then add flour, milk, salt and baking powder. Mix well. Add cheese, spinach and onion. Again mix well. Spoon into baking dish and level off. Sprinkle with seasoned salt if desired. Bake at 350 degrees for 35 minutes. Remove and let cool 45 minutes, then cut into bite-size squares, 3/4 to 1 inch each. Squares freeze well.

To serve, defrost and reheat at 325 degrees for 12 minutes. Makes 60-90, depending upon size of square.
