SPINACH SQUARES 
2 pkgs. fresh spinach (10 oz.)
4 tbsp. butter, softened
1 c. flour
1 tsp. salt
1 tsp. baking powder
Shredded Cheddar cheese (12-16 oz.)
3 eggs
1 c. milk
Optional - 1/2 c. chopped onion

Wash, cook and drain spinach. Use large bowl, beat eggs well. Add softened butter, flour, milk, salt, and baking powder. Mix well. Stir in grated cheese and cooked spinach. Spoon mixture into 9 x 13 inch greased pan and level off.

Bake at 350 degrees for approximately 35 minutes. Remove from oven and cook in pan for approximately 45 minutes. Cut into bite size squares. Freeze well. Defrost and reheat until hot.
