CHILI CON QUESO CASSEROLE | |
4 c. corn chips, coarsely crushed 1 tbsp. chopped mild green chilies or jalapeno peppers 2 c. (8 oz.) shredded cheddar cheese 1 tbsp. butter, melted 2 cans (15 oz. each) Dennison's chili con carne with beans (reg. or hot) 1 1/4 c. chopped onion 1/4 c. chopped pimento 2 tbsp. chopped scallions Preheat oven to 400 degrees. Grease 1 1/2 quart baking dish. Saute onion in butter until transparent; remove from heat and stir in pimento, scallions and peppers. Line the bottom of baking dish with the crushed corn chips. Carefully spread half the Dennison's chili over the chips. Layer half the onion mixture and 1 1/2 cups cheddar cheese. Repeat chili and onion mixture layers. Sprinkle remaining 1/2 cup shredded cheese on top of casserole. Bake for 20 to 25 minutes. Serves 6 to 8. |
