SPINACH AND CHEESE SQUARES 
1/2 stick butter
1 c. flour
1 tsp. salt
1 lb. Monterey Jack or Swiss cheese, grated
4 c. fresh spinach or 2 boxes frozen spinach
3 eggs
1 c. milk
1 tsp. baking powder

Melt butter in 9 x 13 inch baking pan in oven. Beat eggs, flour, salt, baking powder and milk together. Add grated cheese and spinach. Pour in pan on top of butter. Bake at 350 degrees for 25 minutes. Cool. Cut into squares. Can be frozen and reheated at 325 degrees for 12-15 minutes.
