CRUSTLESS SPINACH QUICHE 
Cook and drain well:

10 oz. frozen spinach

Add and mix:

1 bunch chopped green onions
4 eggs
16 oz. (2 c.) cottage cheese
2 c. (8 oz.) grated Cheddar cheese

Pour into greased 9 x 9 inch pan. Top with 1/2 cup bread crumbs. Bake at 400 degrees for 40 minutes, or until a knife comes out clean. For an extra-special touch, pour into an unbaked pie shell before baking. Any cooked, chopped vegetable may be used instead of the spinach-my family especially likes grated, lightly steamed zucchini or summer squash.
