PEROGIES 
2 1/2 c. flour
1 egg, beaten
1/2 tsp. salt
2 tsp. oil
1 tsp. baking powder
3/4 c. warm water

FILLING:

Mashed potatoes
Grated cheese
Salt & pepper to taste

Sift flour, salt, and baking powder together. Beat liquids together. Add dry ingredients. Knead for several minutes. Keep in covered bowl until ready to use. Roll dough very thin and cut into 4" square. Add 1 to 2 tablespoons of filling. Fold dough over and pinch edges to seal. Drop into boiling water for 2 minutes. Fry in butter browning on both sides. Serve with sour cream.
