MOCK PEROGIES 
2 lbs. potatoes
1 1/2 lb. mild longhorn cheese
2 sticks butter
2 or 3 large sweet onions
1 box lasagne noodles
Salt & pepper to taste

Cook pared potatoes as if to make mashed potatoes. Mash cooked potatoes, adding butter and milk. While still very hot, cut the cheese and add to potato mixture. While potatoes are cooking, you can be frying the onions in butter till soft, and the noodles can be cooking to Al dente stage. Drain noodles and layer in an oiled casserole. Put noodles then potato mixture spread over noodles, then add butter and onions. Do this 2 or 3 times, ending with noodles. Finish grated cheese on last noodle layer. Bake at 350 degrees for 35 to 45 minutes until cooked through. Do not put too much butter and onions mixture on potatoes. It will spill over and cause a mess. Use enough to make moist, but not saturated.
