FAMOUS LEMON PIE | |
3 tbsp. cornstarch 1 1/4 c. sugar 1/4 c. lemon juice 1 tbsp. grated lemon rind 3 eggs, separated 1 1/2 c. boiling water 1 baked pie crust Meringue on top Combine cornstarch with 1 1/4 cups sugar, lemon juice and lemon rind. Beat egg yolks and add to above mixture. Gradually add boiling water. Boil gently, stirring constantly. Pour into baked crust. Meringue: Beat the egg whites until stiff but not dry. Beat in 6 tablespoons sugar. Spread on pie so all sides are covered. Bake at 425 degree oven until brown. |
