LEMON SHOOFLY PIE | |
Cream 1/2 cupful of shortening with 1 cup of sugar and 1 1/2 cups flour. Remove 3/4 cup of the "crumbs" for topping the pie. Mix 1/2 cup of hot water, 1/2 cup of molasses and the grated rind and juice of 1 lemon, add 1 beaten egg and 1/2 teaspoonful of soda with 1 tablespoonful of water and add to the flour and sugar mixture. Line a pie pan with flaky pastry, pour in the filling and sprinkle with the reserved "crumbs". Bake in a moderate oven. |
