FANCY BAKED COHO 
14 lb. coho in the round
1/4 lb. butter
Salt & pepper
Thyme
3 lemons
1 c. white wine
1 lg. peeled onion, quartered
Sweet basil
3 c. white wine
1 pt. sour cream

Preheat electric oven to 400 degrees. Put onion pieces in cleaned body cavity along with the butter. Then sparingly dust the whole fish inside and out, with salt and pepper, thyme and basil. Bake in uncovered pan for about 20 minutes. Remove from oven. Pour 3 cups white wine over the fish. Cut lemon and squeeze juice all over the fish, then put the lemon rinds right into the pan. Return to oven for another 40 minutes baking. Put fish on heated platter and pour half the juice over the fish. Put the remaining juice into a saucepan and add sour cream and 1 cup white wine to it. mix well and heat to serving temperature over medium heat of electric range. Spoon over the individual servings of baked coho.
