FAT-FREE PUMPKIN-RAISIN CAKE | |
1 2/3 c. flour 2/3 c. sugar 1/4 c. non-fat dry milk 1 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. salt 2 tsp. pumpkin pie spice 1/2 c. raisins 2 egg whites 1 c. canned pumpkin 1/3 c. light or dark corn syrup 1/3 c. orange juice With "no-stick cooking spray" spray 9 inch baking pan (square). In large bowl combine dry ingredients and raisins. In medium bowl combine remaining ingredients. Add to dry ingredients, stir until smooth. Pour into prepared pan. Bake in 350 degree oven 35 minutes or until toothpick inserted in center comes out clean. Cool in pan on wire rack. Makes 16 servings. |
