"MOCK" QUICHE 
1 loaf white Pepperidge Farm bread, cubed with crust (18 slices) or 1 family size loaf
18 eggs
6 c. milk
3 tsp. salt
3 tsp. dry mustard
2 lb. mild ground sausage, cooked, drained
3 c. grated cheddar cheese
Sprinkle nutmeg over all
(Optional: "touch" grated orange peel)

IMPORTANT: Prepare in pan night before. Ingredients need to "set" before baking next day. This will rise approximately 2 inches, then fall as it cools.

Put all cubed bread (do not substitute - only Pepperidge Farm, because it is dense) in bottom of pan. Layer sausage, cheese. Over all, pour eggs, milk (beaten together with salt, dry mustard). Cover with foil. Bake 45 minutes at 350 degrees. Serves 18 people.

OPTIONAL: 2 cups green onions, 2 cups tiny diced tomatoes (do not use seeds, only fleshy part of tomato) and any other vegetable ingredient you choose for the usual quiche recipes.)
